Typical Lodi cheese made from milk, salt, rennet and lysozyme. It is a semi-fat, hard cheese, cooked and slowly ripening. It has a fragrant, delicate flavour, tasty but not spicy. It is perfect enjoyed on its own, accompanied by honey or mostarda, or grated over pasta dishes such as risottos, pasta and gnocchi.
